Description

A refreshing salad bursting with exotic flavors and vibrant textures, featuring crispy rice, colorful vegetables, and a creamy peanut dressing.


Ingredients

  • 200 g cooked rice (Jasmine or Basmati)
  • 1 cucumber (shredded)
  • 1 bell pepper (any color, sliced)
  • 2 carrots (shredded)
  • 3 green onions (sliced)
  • 50 g fresh coriander (chopped)
  • 3 tbsp peanut butter (creamy)
  • 2 tbsp soy sauce
  • 1 lime (juiced)
  • 1 tsp honey
  • 1 clove garlic (minced)

Instructions

  1. Prepare the rice: If you don’t have pre-cooked rice, cook it according to the package instructions. Let it cool down afterward.
  2. Chop the vegetables: Use your sharp knife to cut the cucumber, bell pepper, carrots, and green onions into thin strips or slices. Place them into the large bowl.
  3. Chop the coriander: Roughly chop the fresh coriander leaves and add them to the vegetables.
  4. Make the dressing: In a separate bowl, mix together the peanut butter, soy sauce, lime juice, honey, and minced garlic. Stir until creamy.
  5. Combine the salad: Add the cooled rice to the large bowl with the vegetables and coriander. Pour the dressing over and mix well until everything is coated evenly.
  6. Serve: Let the salad sit for about 15 minutes before serving, allowing the flavors to meld together. Serve chilled.

Notes

For added crunch, consider sprinkling roasted peanuts or cashews on top before serving. This salad pairs well with grilled meats or tofu for extra protein.
